unity – Unity3D compilation configuration for implementation / publication

Is there an option within Unity3D to specify compilation settings?

My goal is relatively simple: when compiling for mobile stores (Play Store / App Store), I want to make sure that my application points to the production services, instead of the test I use in the editor / test on devices.

It is controlled by a field in a MonoBehaviour Currently, but we have to remember to turn it around Test to Production Before making a compilation and publication.
