Can the history of changes of an item be recorded in SharePoint?

I have a list that is essentially a problem tracking list. Leadership wants to know the amount of time that the elements are in certain states in the workflow. They want data to see which state is taking longer.

Sorry if this is a question for beginners. I am new to SharePoint and this is my first SharePoint list. We use SharePoint Online.
